Spinach Nuggets

I should probably come up with a clever name for these, because spinach nuggets is just not doing it, is it? But they are very healthy and can be quite tasty. I say can be only because I have made them once and I already plan on tweaking the ingredients a bit...

Straight forward enough, these nuggets are healthy. 16 ounces cooked chopped spinach, 3 eggs (or 5 egg whites), 1.5 cups cheese of your choosing and a 1 cup bread crumb mixture consisting of 1/2 cup bread crumbs (le duh), 1/4 cup flaxseed meal and 1/4 cup wheat germ.
I used frozen chopped spinach that I first cooked up on the stovetop.

Then, your put it all in a bowl and mix it all up.

Perhaps some food should just not be photographed...
The mixture is just dry enough to be molded into shapes onto a lightly greased cookie sheet. I used a small heart cookie cutter because it seemed like the best size for toddlers.

Bake at 375° for 15 minutes. At this point you are supposed to flip them and continue to bake them for 10 more minutes, but mine were done. Serve them up with hummus, ketchup or mustard. Yum!
